This is not really the problem of the aircraft itself but more or less has to do with the ejection seat, lighter pilot have weaker neck muscle leaving them more vulnerable to neck injury when ejected, newer HMD are heavier too which increase this risk. They fixed it though

You need an escort if you want to go and strike a position inside enemy territory(ofcourse you cant strike inside friendly airspace)
Why would it need an escort? The whole point of any stealth aircraft is that they can avoid combat if necessary. If the problem is the load out, technically speaking, with miniature weapons like SDB or Spear, a block 4 F-35 carry asymmetric load can have 4 AAM and 4 AGM internally.

The parachute is a safety requirement from Norway since they have ways too many icy runways, they can be taken out if deemed necessary. While the hump increase the RCS from some aspect, they are no bigger than two separate nacelles on PAK-FA

I said it before, but that was a flight software test for high AoA condition rather than a dogfight to see who won
Nevertheless, it isn't rare for old aircraft to sometimes prevail new generation in dogfight, it happened several times before when F-4 beat Rafale, F-16 beat Typhoon, T-38 beat F-22. Pilot skills are very important.
