But Shanghai is a business centre similar to Mumbai so the life their is very commercial

For your health u may delete Beijing and add coastal Xiamen.
For culture, Xi'an is good (apart from terra cotta, its Shaanxi Museum is a must-go though most tourist agencies skip it and also Muslim district for cuisine). Additionally Chengdu for a cozy life.
For pluralism, fly to Urumqi where u'll find bazaars and mosques. Like a KMT official said in 1940s "if u haven't been Xinjiang u don't know how vast China is. if u haven't been Xinjiang u don't know how miserable China is".
