Any idea why INS Vikrant doesn't use bulbous bow?
The bulbous bow modifies the way the water flows around the hull, reducing drag and thus increasing speed, range, fuel efficiency, and stability.
Large ships with bulbous bows generally have twelve to fifteen percent better fuel efficiency than similar vessels without them.
And they increase the acoustic signature of the ship - generate more noise.

Nimitz was a old design.
Gerald R. Ford-class aircraft carrier do contain bulbous bow.

Bulbous bow is advantages for big ships like aircraft carriers.

I believe we should add Bulbous bow to our our next generation destroyers and frigates as it not only improves performance, fuel-efficiency and stability but also helps with sonar performance.
Bulbous bow is found more commonly on commercial ships because they cruise at a set design speed and bulbous bow shapes create destructive interference thereby reducing wave drag. Key word "design speed". You go at a different speed and it might end up causing more harm than good because it creates constructive interference, multiplying the wave drag.

So if Indian Navy is not using it on frontline combtants even though our shipyards build ships with bulbous bows for commercial ships regularly, it might be because of a design choice tied to tactics or other operational realities. I'd rather trust the design choices of our Navy here.

TL;DR
Bow design, indeed Ship design is quite complex and best left to the experts at WDB (erstwhile DND).

2x Kolkata Class
2x Talwar Class
2 x Brahmaputra Class
1 x Deepak class tanker
Can anyone name those 2 smallest ships at the back, behind Brahmaputra? Its not clear.
It's 3 Brahmputra class frigates.

That last one I think is either Saryu class or Kora class.
