Kannadigas will never shut up about how awesome Davangere Benne Dosa is. I found it good, but not up to the expectations of the ultimate dosa. Having lived and travelled extensively in the south, surprisingly, the best dosa I have had wasn't even made in the south. It was a paper masala dosa at an Indian Coffee house in a northern city served with the most perfect cup of kaapi. Super foodgasm.

Since you put Tamil Nadu in brackets, it probably indicates you are talking about Madras Presidency, the territory of which was later redistributed into all the four southern states. So, Dosa is native to the south, and every variation might be idiosyncratic to the region, or the individual from that region. Is there anyone who is perspicacious about the Dosa? @Apollyon?

Now, it is universal.

There is nothing called THE Dosa.

It is THE Dosa as dictated by our own taste and palette.

In the Army Messes, the Dosa that is served is as lethal and hard that it can be used to mow down anyone not agreeing with one

And yet is eaten in the Messes with glee, as there is no other choice unless one wants to remain hungry.

Urdu zubaan mehdood nahi, albatta mujhe qattai yaqeen hai ke is mauzu par shayed pehle koi behes nahi hui hogi, lol.
